made in MyKitchen | oyster sauce baked chicken

i’m sure most Asians already know this super simple recipe that i’m going to share in this post..it’s a dish that i’ll usually come up with whenever i don’t feel like working too much in the kitchen, but still want to produce a good dish..originally the recipe calls for just 2 ingredients, but of course being me, i prefer things done my way and suited to my own taste buds..  =D

unlike light soy sauce, oyster sauce is much, much lighter in taste and you don’t really have to worry about using too much of it because of that..when baked covered in tin foil, juices from the chicken and the marinade combine together and you’ll get this delicious and flavorful sauce that tastes great mixed with piping hot white rice..this dish can be paired with flavored rice too, i.e spiced rice, coconut rice, if you like..

OYSTER SAUCE BAKED CHICKEN

Ingredients :

  • a whole chicken
  • oyster sauce
  • dark soy sauce (for color)
  • sesame oil
  • ground black pepper

Method :

  • clean chicken, and pat dry with absorbent kitchen towels/paper
  • in a small bowl, mix oyster sauce, dark soy sauce and sesame oil. gauge the taste and adjust as needed

  • pour marinade on chicken, add on a few dashes of ground black pepper, and rub it al over, including the cavity
  • leave to marinate in the fridge for about an hour or more

  • when ready to cook, preheat the oven to 230-250° Celcius
  • wrap marinated chicken up in aluminium foil and place on baking tray
  • bake chicken for about 45 mins – 1 hour, depending on the size of the chicken
  • check for doneness using a food thermometer, or by cutting a slit on a drumstick, right to the bone. if the meat is still bloody, return into the oven and bake for longer until fully cooked
  • serve, and enjoy
