made in MyKitchen | stir fried black pepper prawns

you know those bottled commercial black pepper sauces that are displayed alongside bottles of chilli sauces and tomato ketchups in stores?

i absolutely dislike them..

they always, always give me excess gas and cramps in my tummy.. besides that, i’m also not a fan of the taste.. the heat from the black pepper is often too strong for my liking..

so, whenever i plan to cook a dish with black pepper sauce, i get my mortar and pestle out, grind black peppercorns to powder, and make a sauce from scratch.. it’s so easy and tastes so much better than those store bought ones too.. besides, the thing with homemade stuff, you absolutely know the ingredients that go into them.. also, no additives, preservatives, artificial flavors and whatever else is always a huge plus..

so, if there’s anything banned from my pantry, store bought instant black pepper sauce is one of them..

today’s recipe happens to be one of hubs’ favorite stir fry dishes.. he, too, prefers black pepper sauce made from scratch.. :mrgreen:

you can try this recipe with chicken, beef, pork, and other seafood if preferred..

STIR FRIED BLACK PEPPER PRAWNS

Ingredients :

  • medium – large prawns, remove heads and shells but keep tails intact, and butterflied

  • curry leaves (optional)
  • garlic
  • shallots
  • black peppercorns

  • oyster sauce
  • a bit of Worchestershire sauce
  • a bit of brown sugar
  • some water

Method :

  • using a mortar and pestle (or a food processor), grind black peppercorns to a coarse powder
  • then, add in garlic and shallots and crush to a pulp

  • heat up some oil in a wok/pan and saute the crushed wet spices and black pepper mixture until fragrant
  • add in some water, oyster sauce, Worchestershire sauce and brown sugar
  • taste as the sauce comes to a simmer. add seasonings or water if needed

  • let the sauce reduce a little
  • add in prawns and curry leaves

  • stir fry until the prawns are cooked through

  • turn the heat off when the prawns are done
  • serve, and enjoy
