chapter V

when baking, follow directions.. when cooking, go by your own taste.. ~ Laiko Bahrs

made in MyKitchen | meat balls in spicy ketchup

hey there~~ you look really hot, just my kinda girl~

*glares and starts hissing*

wanna go for a romantic stroll? *winks*

*hisses and growls continuously*

*walks in circles in front of the lady, showing off his long bushy tail and soft, fluffy fur*

come on.. it’ll be fun~~ *winks*

*smacks the horny boy on his head with her fat paw*

*yowls at the top of his masculine voice*

le sigh.. our boy Viggo has just entered adulthood and is currently in heat.. we brought him home from boarding three days ago and he’s put on a lot of weight and showing tell tale signs of the dreaded mating period.. i bet his neighbor at the boarding place, a big male of similar colorings, taught him a few things on becoming a man.. humph..i certainly don’t remember having taught him how to flirt, that’s for sure.. :???:

such chaotic days.. the furkids running around the house creating a lot of noise and turning everything upside down.. myself down with really bad fever, trying to separate the constantly yowling horny boy from the terrified lady while sneezing my poor head off every few minutes.. resorted to placing the now complacent lady in the cage, while waiting for tomorrow or Sunday to quickly arrive so that we can bring the horny boy to the clinic to get spayed.. poor horny boy can do nothing but lurk around outside, staring at her longingly, while she cleans herself on her favorite cushion, one watchful eye always on him..

my poor babies.. le sigh.. well, at least there’s much welcomed peace now that they’re both separated.. for a while..

and then there’s the continuous hot weather and bad haze..

the husband seldom gets sick, but when he does, it’s like having a fussy and cranky baby in the house.. unpleasantly stressful and annoying , both at the same time.. :???: well, unlike last year’s nightmare when we were both down at the same time, this year, the only one intoxicated with meds and walking around like a zombie is.. yours truly.. le sigh..

thanks to the powerful drugs prescribed by the doc, i’m now on the mend, and with fingers crossed, hope that i don’t catch anymore bugs throughout this hazy period..

so, anybody out there going through the same predicament(down with fever/flu/cough/sore throat) as i am, here’s a bit of advice.. sure, sure, you’ve heard it plenty enough, but

  • drink plenty of fluids (coconut water, cooling teas, plain water, etc)
  • stay indoors, away from the haze/smog
  • wear a mask outside (it does help, trust me..)
  • avoid spicy foods, ice (dries up your throat), or any ‘dangerous’ foods and drinks that may aggravate the sickness
  • go straight to the clinic if your fever hasn’t subsided after a day or two
  • take your meds on time, FINISH the antibiotics

and most important of all, methinks —>

today’s recipe is a late post.. it was supposed to be posted together with the previous one, but i didn’t have enough time to do both.. so, NO, i’m not crazy enough to cook or even eat anything spicy in the condition i’m currently in, unless i’m a masochist looking to prolong the painful sore throat and dry cough i’m trying to get rid of.. but then again, it’s always when one is sick and the craving for forbidden foods is magnified tenfold, huh? i’ve been craving for nasi lemak (coconut rice with spicy sambal) and good ol’ Terengganu keropok lekor (fish sausage, steamed/deep fried) dipped in plenty of spicy sambal belacan (a condiment made of chilli, dried shrimp paste, lime juice, etc).. le sigh..

this is a very simple recipe, easy enough to make and really good with just white rice alone.. if you like it non-spicy, omit the chilli flakes altogether.. the pork mince can of course be substituted with other meat mince if preferred.. try to use fresh veg if possible, instead of the frozen mixed veg pack of diced carrot, green peas and corn pearls..

Ingredients :

  • pork mince

  • red, yellow and green capsicums/bell peppers, cut into cubes

  • garlic, finely chopped
  • tomato ketchup
  • chilli flakes (i used gochugaru/Korean red pepper flakes)
  • corn starch
  • Shao Hsing wine/Chinese cooking rice wine
  • ground black pepper
  • a bit of palm sugar
  • fine sea salt
  • a bit of water

Method :

  • heat up some oil for deep frying
  • mix pork mince with sea salt, ground black pepper and corn starch

  • using fingers, shape seasoned pork mince into balls and arrange on a plate

  • when the oil is hot enough, deep fry the meat balls until fully cooked through

  • drain the cooked meat balls off excess oil on absorbent kitchen towels. set aside

  • in a wok, heat up a bit of oil and saute garlic until fragrant
  • add in tomato ketchup with a bit of water to dilute it
  • let the ketchup come to a simmer
  • add in Shao Hsing wine, chilli flakes and palm sugar
  • taste as you cook. add more palm sugar , ketchup or water if needed

  • add in meat balls and stir well
  • let the sauce come to a simmer before adding in the cubed capsicums/bell peppers

  • let everything cook for a further minute before turning the heat off
  • serve, and enjoy
